Ok, More about the Moussaka, 1) I will never use canned tomatoes again in a dish that is so much about the tomato...the Italian canned tomatoes I used were peeled whole, in puree with basil added...they were way too tomato sauce taste...ewe. So, That was a failure, what with the italian sausage, It tastes like a pot of Ragu with eggplant pieces...Que lastima! It will be good as a pasta sauce though...But that would Ruin The Food Combo ness.....Live and learn.
Side note: K.T.,My dear, deglazeing is when you pour a liquid on a sizzling pan of stuff to unstick the juicy bits from the pan and incorporate all the goodness while adding some flavor, if you use wine, beer, whiskey, port, stock, whatever you want to experiment with. You can also use water, the alcohol gives some sweetness and depth though. So, Fresh tomatoes for this one and drain them well. NEXT.....Ah, yes, more bootiful treasures from my birthday shopping experience..These lovely tins, this gorgeous 1930s japanese bowl and these hand made Webs, also bought the runner at the top for a scarf, it looks cute. the bowl was $20, but it was my birthday and i have blindness to bank account when thrift shopping...the Webs and scarf, a steal at like $13 for all and the tins $13 for all...I know ..... but ITS nOt The 80s anymore!!!!
I think i will use some of the webs for christmas wrapping elements , they also look good decorating my wood panel wall in my office.

AMB if you deglaze with wine/alcohol can you get a flame in the pan from the alcohol??
